From Betty's Kitchen comes this recipe for FRESH FLORIDA ORANGE CAKE

 

INGREDIENTS:

2 Cups Flour
2 Cups Sugar
1 ½ teaspoons baking soda
½ teaspoon baking powder                
3 oranges, peeled and diced
1 ½ teaspoons vanilla
½ cup orange juice
2 eggs

INSTRUCTIONS:

Mix all cake ingredients together with electric mixer on high until blended very well.  Pour into greased and lightly floured cake pan.  Bake at 350 degrees for 30 minutes or until toothpick inserted into center comes out clean.  Let cake cool completely before topping.

Topping:  Mix together pineapple (include juice) and pudding mix with  mixer until mixed through and thick.  Fold in cool whip (‘till it looks like enough!).  Top the cake and enjoy!!

Note:  This cake actually tastes better the next day after it’s been in the fridge over night. Just ask Bakey!

 

 

TOPPING INGREDIENTS

1 Can Crushed Pineapple
1 Package instant vanilla pudding mix
1 Small Tub Cool Whip
